After a primary fermentation in barrel and 9 years of aging on its lees, the 2016 Sabine Godme “Millesime” Grand Cru Champagne comes alive as an open and expressive vintage Champagne. Complex aromas of cooked apples, apricot compote, and lemon meringue are layered above notes of butter, brioche, and forest floor. The texture is creamy and supple, with a long finish. With only 900 bottles produced, this wine could benefit from several more years of aging and is best paired with seafood and shellfish as an aperitif.
