(Zelo Bianco pronunciation: Zeh-loh Bee-ahn-koh)
Zelo Bianco is a white wine blend inspired by the blends of Northeast Italy made using the Napa roots of the Uvaggio winery. This white wine blend combines around 60 to 70 percent Pinot Grigio grown in Napa, Carneros, about 15 to 20 percent Traminer grown in Napa, Carneros, and finally around 15 percent Moscato Giallo from Lodi, Alta Mesa. Giving the grapes used in Zelo Bianco an extended hang time produces a mature version of the fruit, leading to a very flavorful and expressive wine.
The California white wine blend is perceived as light, fruity, and dry. It produces floral aromas of spring blossoms, freesia, and jasmine, and bold fruit flavors of lemon, apricot, apple, and pear, with a clean lingering finish.
Zelo Bianco wines pair well with foods such as pasta, pork, poultry, and shellfish, but some argue it pairs best with southeast Asian dishes.
