A delightful 1996 vintage Cabernet Sauvignon from California’s Sierra Foothills. Stevenot Cabernets are perennial award winners and consumer favorites. Frank Sutherland of the Chicago Sun-Times rated the 1996 Stevenot Cabernet #1 in a tasting held in 1999 — “This wine combined ever so nicely its fruit and cedar aromas. The soft, supple fruit cherry and blackberry rolled over the tongue, providing a nice mouthfeel. There was a pleasant hint of pepper at the end. My experts ranked this No. 1 in the tasting.”

Winemaker Chuck Hovey allowed the Cabernet grapes to ferment for 10 days; then the wine sat on the skins for another 12 days; followed by 16 months aging in American oak. Finally, the wine was aged in the bottle for 3 additional years, giving it a nice smoothness and complexity. The winery’s own tasting notes say this Cabernet “shows great bright cherry fruit flavors in the mouth and finishes with just the right amount of tannins. The wine makes a great partner to veal and pork as well as pasta.”
