A juicy chicken breast recipe with roasted garlic and brandy sauce...pair it with a Pinot Noir to complete this amazing dish!Yield: 8 - 10
Prep Time: 8 Minutes
Cook Time: 40 Minutes
• 8 - 10 chicken breasts
• 1/2 C. flour
• 1/2 Lb. butter or margarine
• 1/4 C. shallots
• 2 T. fresh thyme
• 2 T. fresh basil
• 1 can beef stock
• 1 1/2 C. brandy
• 2 heads of garlic, roasted in olive oil at 350º until soft, then finely chopped
Place butter in sauté pan. Sauté shallots until soft, add brandy and flame off. Add beef stock, garlic, and herbs. Reduce by one-third. Add flour to thicken. Salt and pepper to taste.
An hour before grilling the chicken breasts, brush sauce over. Baste frequently while cooking. Cook slowly over low fire approximately 20-30 minutes. (We use native oak, but you can use any cooking wood to impart flavor).
