• 3 medium potatoes
• 1 onion, chopped
• 1 cup fresh watercress leaves
• 6 cups water
• 3 table spoons olive oil
• Salt to taste
Step 1: Wash and prepare the watercress leaves by removing them from the stems.
Step 2: In a saucepan bring water to a boil. Add potatoes and chopped onions and let boil for 20 minutes. After 20 minutes, add olive oil, watercress leaves and salt.
Step 3: Allow the pot to boil until it resembles a smooth cream, stirring continuously.
Once smooth, serve in individual bowls.
