Snapper Rancheros


A fantastic twist on a traditional snapper dish that will have you going back for seconds. Pair this with your Uvaggio Vermentino or Zelo Bianco from your monthly wine club shipment for best results!

Cook Time: 25 Minutes


• 6 snapper filets
• 2 Tbs olive oil
• 3 large shallots, sliced
• 2 cloves minced garlic
• 6 tomatoes, diced
• 1 4 oz. can diced green chilies
• 2 Tbs oregano
• Salt and pepper, to taste
• 1 each: avocado, lime, clove of minced garlic


Preheat the oven to 350 degrees.

In a large skillet, sauté the shallots and garlic in oil for about 2 minutes. Add the tomatoes and chilies, cooking until heated through.

Stir in the oregano, salt, and pepper. Slide the fillets under the tomato mixture and bake for 20 minutes.

Mash the avocado and blend in 1 teaspoon of lime juice, minced garlic (optional), salt and pepper. May be spiced with hot sauce if desired. Spoon over the fish/tomato mixture when serving. Also excellent over white rice.
