Everyone knows that Greek Food is some of the healthiest on Earth. But it is also one of the tastiest. The following dip demands a spicy wine, for that reason a Zinfandel or David Bruce's Petite Sirah is an excellent accompaniment.Yield: About 2.5 Cups

• 1 Cup extra-virgin olive oil
• 1/2 Cup red wine vinegar
• 1/2 Cup blanched almonds
• 6-8 garlic cloves
• 1/2 Lbs. dried bread, dampened in water, squeezed and broken apart
• Salt to Taste
Place olive oil, vinegar, almonds and salt in a blender and beat until smooth. Add the bread. Beat until creamy and serve.
