Scrambled Eggs with Spinach


A traditional Portuguese breakfast recipe provided by Ana Guedes, chef at Casa de Juste. Enjoy the fresh flavors of this delightful meal. If serving breakfast for dinner, this would pair nicely with a White Blend.

Prep Time: 10 Minutes
Cook Time: 18 Minutes


• 4 - 6 eggs
• 1 cup fresh spinach
• 3/4 cup mushrooms
• Salt and pepper to taste
• Olive oil

*Use the mushrooms in olive oil from your Portuguese Adventure Package!


Step 1: Heat olive oil in a pan and sauté mushrooms (if you are using fresh mushrooms).

Step 2: Boil spinach in a separate sauce pan or in the microwave.

Step 3: Once the mushrooms are close to being done, add eggs and scramble.

To Serve: Serve with a salad made with beetroot and nuts or by itself!
