Ingredients


• 1/2 cup soy sauce
• 1/2 cup sherry
• 6 cloves garlic, minced
• 1 Tbs apple cider vinegar
• 1 tsp thyme
• 1 cup plum jelly
• 1 (4-6 lb) boneless Pork Roast

Coming from a long line of amazing cooks means we live for a good meal and wine with family and friends. Pork Roast is a fantastic main course dish and Nonni’s Savory Marinated Pork Roast recipe has been a staple in the Schatz family for years. This recipe requires preparation a day before cooking and serving.

Add soy sauce, sherry, minced garlic, apple cider vinegar, thyme, and plum jelly to a mixing bowl and stir. Add the boneless pork roast and marinate in a gallon zip-lock bag and refrigerate overnight.

The next day, place boneless roast in a roasting pan and pour the remaining marinade over the roast. Preheat the oven to 325 degrees, cover and bake for approximately 2 hours or until the center of the pork roast registers 160 degrees.

Serve this delicious roast with potato gnocchi and a cream sauce or mashed potatoes and a bottle of the Peltier 2015 Petite Sirah.
