Salmon with Mueller Pinot Noir Sauce

Description

Delicious salmon with layered seasonings and cooked to perfection. Pair this with the Mueller 2012 Cuvée X Pinot Noir.

Ingredients


• 1.5 Pounds of Salmon Filet cut into 4 pieces.
• 1 Shallot, chopped
• 1/2 bottle Pinot Noir
• 2 Clove garlic
• 3 Tablespoons balsamic vinegar
• 1 Tomato, chopped
• 1 Cup vegetable stock
• 3 tablespoons butter cut into 1/2 inch pieces
• Salt and Pepper
• Olive oil

Instructions


Combine shallots, garlic, tomato, wine and vinegar in a sauce pan. Reduce over medium heat to 1/2. Add stock and reduce by 1/2 again. Whisk in butter.

Heat a Teflon frying pan. Brush salmon with olive oil. Season with salt and pepper. Sear fish until browned. Finish cooking on reverse side over medium heat. Salt and Pepper to taste. Drizzle sauce over salmon.
