Salmon with Basil Dijon MustardFeatured by Château Maucoil in the International Wine Club.
A delicious pairing of rich salmon drizzled with creamy Dijon basil mustard sauce.Yield: 4

Cook Time: 30 Minutes
• 4 thick pieces of salmon
• 4 shallots
• 3 Tbs of dry white wine
• 3 Tbs Fallot Dijon Basil Mustard (check your Adventure Package!)
• 1 dollop of light cream
• Finely sliced, fresh tarragon
• Coarse salt and freshly ground black pepper
Pat salmon fillets with salt and pepper.
Finely chop the shallots and set aside. Mix the mustard and cream together and set aside.
Cook the salmon fillets in a skillet. When cooked, remove from the skillet and keep warm. Add the shallots to the cooking juices. Scrape and stir over low heat until soft. Pour in the white wine. When the mixture has reduced sufficiently, add the mustard and cream mixture and tarragon, and stir well.
Remove the sauce from the heat and spoon over the salmon fillets. Serve immediately, when hot, with rice or potatoes.
