Roasted Chicken with Tangerines & Olives

Incredibly simple and delicious, this chicken recipe from Metz Road is fresh, flavorful and the perfect pairing for their 2013 Chardonnay.

Ingredients


• 4 whole chicken legs
• 3 tangerines, unpeeled and quartered (or oranges)
• 2 tablespoons honey
• 3 tablespoons tangerine juice (or orange juice)
• 2/3 cup pitted green olives

Instructions


Preheat oven to 400. Place chicken skin side up on roasting pan, sprinkle with salt and pepper. Toss olives and oranges around the chicken. Roast for 35 minutes. Remove pan from oven.

In a small bowl whisk together the orange juice and honey and brush over chicken. Return pan to oven and continue to roast for about 10 min. or until chicken is golden and cooked through. Serve with rice, pasta or a grain and a glass of Metz Road 2013 Chardonnay.
