Pork Loin with Mushrooms, Cream and Potatoes


This authentic Portuguese meal is bursting with amazing flavors that is perfect for dinner, or reheat it for leftovers! Pair this with a Red Blend.

Pork Loin:
• 1 pork loin
• Fresh garlic, salt and pepper to taste
• Olive Oil
• Mushrooms

Gratin Potatoes:
• 4 large potatoes
• 4 cups of milk
• 1 cup of fresh cream
• Grated cheese
• Nutmeg
• Salt


For the Pork Loin:
Step 1: Prepare the pork loin by rinsing it and trimming the excess fat. Add salt and pepper.

* Optional: Cut pork loin into 1.5 in rounds before cooking.

Step 2: In a pan, heat olive oil and sauté garlic until fragrant. Add full pork loin or slices to the pan and fry until golden in color.

Step 3: Add the strained mushrooms and fresh cream to the pan and let cream sauce warm on low heat.

For the Gratin Potatoes:
Step 1: Preheat oven to 400ºF

Step 2: Cut the potatoes in very thin slices and place in an oven-proof pan in layers.

Step 3: Once the potato slices are arranged in the pan, season them with nutmeg, salt and grated cheese.

Step 4: Mix the milk and fresh cream together and then pour the mixture over the potatoes until they are completely covered. Place it in the oven and cook for 45 minutes.
