• 2 whole game hens, rinsed and clean
• Salt & pepper
• 1 tablespoon olive oil
• 2 tablespoon butter
• 1 cup Michael Pozzan Sonoma Chardonnay
• 1/2 cup apricot jam
• 1 teaspoon Dijon mustard
Salt and pepper the hens inside and out. Rub with olive oil and roast in the oven at 400 degrees for 15 minutes. In the meantime, prepare the glaze.
Melt the butter in a sauce pan with the wine. Simmer on high until the liquid is reduced by half. Add the apricot jam and mustard, stir and simmer on medium heat until the sauce thickens.
Turn oven down to 350 degrees and roast hens until juices run clear, about 1 hour. During the last 15 minutes of cooking, spread glaze on birds. Adjust the oven temperature so as not to burn the hens. Rice pilaf and a green salad make a nice accompaniment.
