Featured by Newlan Winery in the Gold Wine Club.

A wonderful éntree from the Newlan kitchen! This marinated grilled flank steak is flavorful and pairs perfectly with a glass of Cabernet Sauvignon. **Steak will need to marinate overnight.

Yield: 4
Prep Time: 25 Minutes
Cook Time: 10 Minutes

• 3 lbs. flank steak
• 3 to 4 shallots
• Fresh ground pepper
• Short wooden skewers
• 1 cup red wine
• 1 clove garlic, minced
• 1/4 cup olive oil
• Seasoning salt

Lay the flank steak out flat. Sprinkle the olive oil, pepper and seasoned salt on it. Mince the shallots and the garlic and spread on it also. Pour the wine over the steak. Now cut the flank steak in two. Roll each piece up and cut each roll into two pieces, and secure each roll with two skewers. You should have four rolled steaks ready to marinate in the remaining wine sauce.

Place the steak in a shallow pan and pour the wine over the top of it. Cover tightly for up to two days. In the morning turn them over to marinate the other side and cover tightly again. Bring to room temperature before grilling.

Serve with a salad, baked potato and fresh corn.
