Loring Lamb Lollipops with Fresh Fig SauceFeatured by Loring Wine Company in the Platinum Wine Club.
2 Racks of Lamb Chops, cut into individual ‘lollipops’
2 Tbsp Olive Oil
8 Ripe Fresh Figs, quartered
1 Tbsp Honey
2 Tbsp of good quality Balsamic Vinegar
3 Tbsp Sherry
Salt and Fresh Black Pepper
Pat the individual lamb lollipops dry, season with the salt and pepper and rub into the meat. In small frying pan, heat 1 tbsp of olive oil over a medium heat. Quickly sauté the figs and then add the honey.
Cook for a few minutes and slightly mash the figs. Add the balsamic vinegar, and cook for a couple of minutes longer, then pour in the sherry. Turn the heat down and let the sauce simmer to thicken while you cook the lamb.
Add the remaining olive oil to a large frying pan, heat the oil on a medium heat and pan fry the lollipops to preferred doneness. Serve hot with the fig sauce poured over the lollipops.
