Lamb Kofta (Meat Skewers)


A Persian inspired lamb skewer, perfectly paired with a Cabernet Sauvignon from your wine club box. Enjoy!

Cook Time: 10 Minutes


• 1 lb. ground lamb
• 2 shallots, peeled
• 3 garbic cloves
• 3 tablespoons flat leaf parsley
• 2 mint leaves
• 2 teaspoons spanosh paprika
• 2 teaspoons cumin
2 teaspoons corriander seeds
• 1 teaspoon salt
• 1 teaspoon black pepper
• 1/2 teaspoon ground ginger


Combine all of the ingredients (except lamb) into a food processor until minced. Add the mixture to the lamb and combine using your hands to mix well. Form a small handful of the lamb mixture around a skewer creating a long sausage shape. Continue this process with remaining lamb. Heat your grill to med-high and brush oil on the cooking grate. Cook lamb skewers aprx. 5-6 minutes on each side. Serve on the stick with tzatsiki sauce.
