Ken’s White Pizza (PIZZA & PINOT)Featured by CRU Wine Company in the Gold Wine Club.
1/2 Cup Ricotta
1/2 Cup Shredded Mozzarella
2 TBSP. grated Parmesan
1 TBSP. Olive Oil
1 large clove garlic, finely chopped (2 tsp)
1/2 Tsp Finely Chopped Fresh Rosemary or Thyme
1/4 Tsp Salt
1/8 Tsp Pepper
Cornmeal for dusting
1 Pizza Dough of your choosing
Place oven rack on lowest shelf, place pizza stone in oven if you have one. Preheat oven to 550°. In a medium bowl, mix ricotta, mozzarella, Parmesan, oil, garlic, rosemary, salt and pepper. Dust a 14-inch-wide pizza peel with cornmeal and place flattened dough on top. Stretch dough into a 13-14 inch round. Spread cheese mixture in an even layer on dough, leaving a 1-inch border.
Bake pizza until crust is just slightly charred on top and golden on bottom and cheese has melted—about 8 minutes. Let rest 2 minutes before cutting.
Open a bottle of the 2011 CRU Santa Maria Pinot Noir, pour a glass for you and your lucky dining partner(s). Serve Pizza with the Pinot. ENJOY As Ken always says: Life is good!
