• 2 1/2 lbs chicken legs or thighs
• 1 cup Preeminence wine
• 2 cloves garlic
• 1/4 cup honey
• Olive oil or grapeseed oil
• Fresh bunch of rosemary
Perfect for your backyard gathering or patio table for two, Rod’s Italian Fried Chicken is easy to make and pairs perfectly with a glass of the Peltier 2016 Prééminence White Blend.
In an electric fry pan, pour 1” of olive oil or grapeseed oil. On high heat, add the chicken and half a dozen rosemary sprigs when the oil is hot. Do not overcrowd the pan, as you may need to repeat depending on amount of chicken and pan size. Cook until golden brown, turning the chicken occasionally for a total of about 40 minutes.
For the reduction, add Preeminence, garlic, and honey to a sauce pan. Bring the sauce to a boil, then reduce the heat, and simmer for about 10 minutes.
Remove the chicken from the pan and lightly salt immediately. Plate the fried chicken with remaining sprigs of rosemary, spoon sauce over the chicken, and serve with a glass of chilled Prééminence. Recipe provided by Peltier Winery.
