Grilled Duck


A simple duck recipe grilled to perfection and results in fall-off-the-bone meat. Add veggies and a glass of Pinot Noir from you most recent Pinot Noir Wine Club shipment.

Cook Time: 60 Minutes


• 2 whole ducks
• 2-3 lemons, halved
• Fresh herbs (parsley, sage, thyme)
• ½ cup butter
• 1 cup water
• Salt & Pepper
• Wood chips (we like apple wood)


Soak the wood chips in water for 30 minutes

Rinse ducks, season with salt & pepper inside and out. Pack cavity loosely with lemon halves and fresh herbs then skewer the neck closed and truss the ducks. Spread butter over the ducks.

Put oiled rack inside roasting pan and add the water the pan.

Prepare the grill, add the wood chips. Grill the ducks for 1-2 hours (the water will steam and keep moist) and then let crisp without water to finish.
