Grilled Chicken Salad with Goat CheeseFeatured by Hanna Winery in the Gold Wine Club.
A quick, yet amazing salad topped with freshly grilled chicken and goat cheese. Serve this with a Sauvignon Blanc.Yield: 4

Cook Time: 30 Minutes
• 2 whole chicken breasts
• fresh herbs; rosemary and oregano
• salt and pepper
• 8 oz. goat cheese (mild - if too sharp, cut with a little cream)
• 2 pippin apples, cubed
• 4 handfuls baby salad greens
• balsamic vinaigrette
Rub chicken with herbs, salt and pepper. Grill chicken for 10 minutes on each side, or until firm to the touch. Set aside. Toss greens and apples in vinaigrette and dot with goat cheese.
Assemble on plates. Fan chicken on top by cutting the breast lengthwise down 3/4 of the breast, leaving an uncut base.
