Duck - Zaca Mesa Style with Spicy-Sweet Sauce


This duck recipe is a wonderful addition to any holiday, or celebration as well as a casual family dinner. The duck is tender and the flavors are enhanced by the spicy-sweet berry sauce. Compliment this meal with a lovely Syrah.

Yield: 2 ducks
Prep Time: 120 Minutes
Cook Time: 45 Minutes


• 2 - 4 whole ducks
• 2 C. red wine vinegar
• 2 C. honey
• 6 cloves garlic
• 1/2 C. soy sauce
• 2 T. crushed red pepper flakes
• 6 fresh plums or 2 baskets raspberries or 1 qt. sour cherries (add 1/4 C. sugar)


In a saucepan, put vinegar, honey, soy, chopped garlic, crushed pepper flakes and fruit. Bring to a boil, lower heat and simmer for 1/2 hour. This can be done up to 24 hours in advance.

Wash and dry the birds. Salt and pepper the inside cavity. Brush the outside of the birds with the sauce. Do this 90 minutes before cooking.

Cover over a medium fire for 35-45 minutes. Keep the birds high and away from the flames; as heat diminishes, lower the birds. Baste in the last few minutes to avoid blackened appearance.
