Cioppino Sauce

Cioppino Sauce


Café Champagne is an award-winning restaurant at Thornton Winery. Working closely with the winemaker, Chef, Steve Pikell brings an outstanding cioppino sauce to pair with a glass of Culbertson Reserve Brut.

• 1 T minced garlic
• 1 T minced shallots
• 1/2 T minced ginger
• 2 T olive oil
• 1 Bay leaf
• 1 T fresh minced basil
• 1 T fresh minced cilantro
• 1 t. dried oregano
• 2 Cups Culbertson Reserve Brut
• 8 oz. clam juice
• 2 14-oz. cans diced tomato
• 1/2 t. salt
• 1/2 t. sugar


Sauté garlic, shallots and ginger in the olive oil until soft (about 2 minutes). Add everything else except wine, tomatoes and clam juice. Stir together until mixed thoroughly (about 1 minute). Add Champagne, tomatoes clam juice and simmer one hour to develop flavors.
