Castoro Cellars is located in Paso Robles California's thriving central coast grape growing region. Niels and Berit (Bimmer) Udsen began Castoro Cellars in 1983. In a span of a dozen years, the Udsen's business grew from making a few barrels of wine for family and friends in a rented corner of a local winery to developing a notable commercial custom-crush operation and a 20,000-case, award-winning winery of their own. Niels, born and raised in Ventura, California, got started in the Paso Robles wine business while studying Agribusiness at California Polytechnic University, San Luis Obispo. After graduation he went to work with Tom Myers at Estrella River Winery. Niels' long-time nickname "Beaver", evolved further when he was in Italy, his friends soon took to calling him "Il Castoro", which is beaver in Italian. The name stuck, and since the beginning, Castoro Cellars' wines have pictured a beaver on each label. Castoro Cellars has also had the same expert production team since 1990. Veteran winemaker Tom Myers and assistant winemaker Mikel Olsten are key players in the hundreds of awards Castoro Cellar wines have earned over the years.

2004 Reserve Zinfandel Zinfusion

Castoro Cellars 2004 Reserve Zinfandel Zinfusion, won top honors at the Orange County Fair Wine Competition earning a Gold Medal. This super Zinfandel garnered a Silver Medal at the Mid-State Fair Central Coast Wine Competition and a second Silver Medal at the popular, California Zinfandel Championship. The wine also brought home an 87 Point rating from the California State Fair. The San Francisco Chronicle scored the 2004 Zinfusion Two and One Half Stars out of three and listed the wine as one of the Top Zinfandels tasted—“This fellow is more massive than its sibling, both on the nose and palate, with more apparent alcohol and tannins lingering on the finish. There's dark chocolate, black raspberry jam, leather and a hint of mineral with bright acidity to balance.” The Castoro Cellars 2004 Reserve Zinfusion is a marriage of a three vineyards that complement each other to produce a unique wine that showcases Paso Robles Zinfandel.
